Type 2 diabetes; another scary health issue for me. While I don’t have diabetes yet, I know I’m on the path already, with high blood pressure and high cholesterol and yep, belly fat. Given that, I’m on the lookout for ways to avoid type 2 diabetes before it bites me.
So, I wanted to share a great Video I watched with Sarah Hallberg. Sarah made a good argument about reversing type 2 diabetes with a very low carb diet. Oh ya, I know, low carb, lots of meat……
We’re probably all familiar with traditional low carb/high fat diets that promote eating HUGE amounts of meat, bacon, cream…UGH. I can just feel my arteries filling in with globs of fat and cholesterol. That absolutely wouldn’t work for me.
I’m so glad Hallberg has come up with a more sensible option – one that I can play with and that will fit the vegan life better. Carbs have always been a downfall for me. I could eat pasta every day. And bread; don’t even get me started on my love affair with bread. So, while I haven’t yet cooked with coconut flour, I’m excited to get started with it and a variety of other non-grain flours so I can still get my ‘carb’ fix and not feel deprived.
Sarah Hallbert’s method to reverse type 2 diabetes centres around the no grain, no potatoes, no sugar and lots of fat mantra, the fats are good oils – coconut, flax, olive oil. Delish food is still prepared without grains, but instead using healthy options like coconut and flax flour.
